Sweet Potato Potato Salad
This delicious salad has elements of traditional potato salad, but we turned up the flavor and healthified some of the ingredients. If you want to balance out all that healthiness, feel free to crumble in some bacon or even chorizo – super yum.
2 medium sweet potatoes – peeled and cubed
1 T salt
¼ c red onion – finely chopped
¼ c Basia’s Pickles (we recommend the Old World Garlic here)
¼ c Basia’s Yellow Squash Relish
½ c Greek yogurt
¼ c mayo
2 T grainy mustard
¼ c fresh parsley – chopped
1 T fresh dill - chopped
1 garlic clove – crushed
1/8 t black pepper
Salt to taste
In a medium stock pot, cover sweet potatoes with an inch of water and add salt. Bring to a boil, turn the heat down to medium and cook for 5-6 minutes, until fork tender. Drain and cool. Set aside.
In a medium bowl, stir remaining ingredients until well combined. Add sweet potatoes and fold gently until fully incorporated. Chill at least one hour before serving.
