Basia’s Cheesy Dill Pickle Pasta Salad
This is a great summer side or vegetarian main! Bring this to your next pot luck and it’s guaranteed to be the star of the show. Personalize this dish with your favorite pasta shape – you really can’t go wrong with such amazing flavors hugging those delicious carbs. This is a crowd pleaser that even kids love!
3 c dry pasta such as spirals or shells
1/2 c Basia’s brine – divided in two ¼ c
¾ c Basia’s Pickles – chopped
3 T onion – minced
8 oz cheddar cheese – shredded
¼ c cheddar cheese powder (such as Anthony’s)
2 T fresh dill
1 t garlic powder
2/3 c mayo
1/3 c sour cream
1 T Dijon mustard
1/8 t cayenne pepper
1/8 t black pepper
Salt to taste
Boil pasta according to package directions, until al dente. Drain and rinse under cold water to stop cooking. Pour ¼ c brine over pasta and let sit for 5 minutes to soak in to pasta. Add remaining ingredients and stir until well combined. Chill for at least 1 hour before serving.
